- 1/2 cup edamame (soybeans)
- 2 tablespoons tahini (sesame-seed paste)
- 2 tablespoons fresh lemon juice
- 1/8 teaspoon ground red pepper
- 1 garlic clove, chopped
- 1/4 cup loosely packed flat leaf parsley
- 1/4 cup olive oil
- 1 tablespoon sesame seeds
- 1/2 teaspoon paprika
- Salt and Pepper, to taste
- Veggies:
- Cauliflower florets
- Broccoli florets
- Baby carrots
- Celery stalks
- Bell peppers
- Radishes
- Whole wheat pitas (optional)
Place edamame and next 6 ingredients (through olive oil) in a food processor with salt and pepper; process until smooth. Spoon hummus into a serving bowl; sprinkle with sesame seeds and paprika.
Serve hummus with a variety of veggies and pitas, if desired.
