Pumpkin Hummus and Pasta Sauce (10.07.15)

2 tablespoons tahini (sesame-seed paste)

2 tablespoons fresh lemon juice

1 teaspoon ground cumin

1/4 teaspoon ground red pepper

1 (15-ounce) can 100% pure pumpkin

1 garlic clove, chopped

2 tablespoons cilantro or parsley, divided

3 tablespoons olive oil

2 tablespoons pumpkin seeds, toasted

1 lb. whole grain pasta, any kind

No Salt Seasoning and Pepper, to taste

Place tahini and next 5 ingredients (through garlic) in a food processor with 1 tablespoon cilantro or parsley, no salt seasoning and pepper. Drizzle in oil; process until smooth. If serving as hummus, garnish with pumpkin seeds and remaining cilantro or parsley. Serve with whole grain pita wedges and a variety of raw vegetables.

If serving over pasta, cook according to package directions. Drain; pour back into the same pot. Add desired amount of pumpkin hummus. Mix thoroughly and warm through. Top each serving with some of the pumpkin seeds and cilantro or parsley.
