March 2nd - 6th is National School Breakfast Week and Jordan School District is talking about the importance of breakfast for kids and how schools are a great place for kids to get a healthy start to the day.

Hearty Breakfast Burritos

Makes 8 Servings
-8 Tortillas (8 in if you want to roll it, 10" if you want to wrap it)
-32 Tater tots
-12 Large eggs
-8 sausage patties or a 1/2 pound ground sausage
-2 cups shredded cheddar

Cook your tater tots and sausages to prepared instructions. Cut your cooked sausage patties into pieces. Cook and scramble your eggs, and warm your tortillas in the microwave for a few seconds so they are pliable. Assemble your burrito by placing the cooked tater tots on the warm tortilla, smash them down just a little bit. Place your scrambled eggs and sausage pieces on top of the tater tots. Sprinkle the shredded cheddar on top and roll or wrap your burrito. Let it set a moment for the cheese to melt and enjoy with your favorite salsa or ketchup condiment.
