Cranberry and Orange Sauce
1/2 pound fresh cranberries
1 cup white sugar
1/2 cup water
1/2 orange, cut into small bite size pieces and zest
1 teaspoon fresh mint, chopped
In a microwave safe bowl, mix together cranberries, sugar and water.
Cover the mixture with wax paper and microwave on high power until the cranberries pop (about 7 minutes) or bring the mixture up to a boil on the stovetop and cook until the cranberries pop.
After cooling, add orange pieces, zest and mint. Chill at least 1 hour for best flavor.
