Thanksgiving Green Bean Casserole

1 pound fresh green beans, washed and trimmed
1 tablespoon butter
1 medium onion, diced
1 8-ounce container sour cream
1/4 cup milk or whipping cream
1/4 cup flour
1/2 teaspoon paprika
1 cup Colby jack or cheddar cheese, shredded
1 cup fried onions (from the can) or potato chips, crushed
Salt and Pepper

Preheat the oven to 350 degrees.

Grease a 2-quart casserole dish. Cook the green beans in boiling water for 2 minutes. Blanch the beans (emerging them into ice cold water; drain). In a large skillet, heat the butter. Sauté the onion for 4-5 minutes with salt and pepper. Add the beans into the pan for 1 minute to coat them with the onion mixture; remove the skillet from the heat.

In a small bowl, mix the sour cream and milk or cream with the flour, paprika, salt, and pepper until smooth. Stir the sour cream mixture into the beans until everything is well combined. Transfer the bean mixture to the baking dish. Sprinkle the cheese evenly over the top. Sprinkle the fried onions or potato chips over the cheese.

Bake for 25-30 minutes. Serve immediately.
