Roasted Nuts and Olives
1/2 jar kalamata and/or green olives, drained1/2 can black olives, drained1 clove garlic, finely diced1 bay leafPinch of red pepper flakesPinch of chopped parsleyPinch of chopped oreganoPinch of lemon zestPinch of cinnamon1/2 cup walnuts and/or whole almonds2 tablespoons olive oil
Preheat oven to 400 degrees.
Cut a large piece of aluminum foil. Place all ingredients in the middle of the foil. Fold tightly, creating a pouch. Roast for 20 minutes. Carefully, open the pouch (steam) and remove the bay leaf. Place into a bowl and serve immediately.
Serves 4-6
Cook’s Tips: This appetizer is SO easy and a huge crowd pleaser! Add any dried fruit for sweetness and flavor. Dried cranberries around the holidays are a nice addition.
