3 tomatoes, diced and juiced2 tablespoons sundried tomatoes, diced1/4 cup corn, fresh or previously frozen1/4 cup parsley or cilantro2 green onions, diced2 tablespoons olive oilSalt and Pepper, to taste
Mix all ingredients in a bowl. Chill for at least an hour for best flavor. Serve room temperature.
