4 sandwich rolls, any type2 teaspoons Gossner Sweet Cream Butter, softened1/2 cup BBQ sauce2 cups chicken, cooked and shredded1/4 cup carrots, shredded1 shallot, thinly sliced1/4 cup cilantro, divided4 slices Gossner Monterey Jack or Provolone cheeseSalt and Pepper
Preheat oven to 350 degrees.
Cut the rolls in half. Spread half a teaspoon on each side of each roll and place on a baking sheet.
In a bowl, combine the BBQ sauce, chicken, carrots, shallots and half the cilantro with salt and pepper. Mix well. Place a piece of cheese on the inside of each top bun. Put 3-4 tablespoons of the chicken mixture on the other half of the bun.
Bake for 4-5 minutes or until the cheese is melted. Sprinkle the remaining cilantro over the top. Serve immediately.
