Z’Tejas Guacamole Margarita (09.05.11)

1T Fresh Avocado
3 cilantro Sprigs
¾ oz. Triple Sec
1 ¼ oz. Repasado Tequila
1 oz. Fresh Lime Juice
1 oz. Jalapeno Mint syrup
1 tsp. fresh salsa
Onion Salt (to rim glass, if desired)

In a shaker tin, muddle the avocado, cilantro syrup and Triple Sec. Add 1 cup of ice to tin then add Tequila and lime juice. Cover tin and shake vigorously. Pour into onion salted –rimmed margarita glass and garnish with fresh salsa on top.

Jalapeno Mint Syrup

1 C water
1 C white sugar
3 jalapeno peppers
½ oz. fresh mint

Combine ingredients in a small sauce pan and bring to a boil. Reduce by ½ and remove from heat. Allow syrup to cool and strain into a container. Refrigerate covered for up to 2 weeks.
