Spinach Tuna Salad with a Creamy Lemon Mustard Dressing (02.14.12)

1/2 lemon, juice and zest1/8 teaspoon onion powder1/4 teaspoon curry powder (optional)1/4 teaspoon dried thyme1 pinch garlic powder1 teaspoon olive oil1 head of spinach, washed, chopped1 tomato, roughly chopped1 carrot, shredded or thinly sliced1/4 cup sesame seeds, toasted1/4 cup Parmesan cheese1/2 cup Creamy Lemon Mustard DressingSalt and Pepper, to taste
In a small bowl, stir together the first 7 ingredients; add salt and pepper. Mix well and set aside. In a larger bowl, combine the spinach, tomato, carrot, seeds and cheese. Add pepper and mix together. To serve, place some of the spinach salad on the bottom of a plate, top with some of the tuna salad. Drizzle 2-3 tablespoons of the dressing over the top. Serve immediately.

1 lemon, juice and zest2 teaspoons Dijon mustard2 teaspoons mayonnaise or sour cream1 garlic clove, minced1/4 teaspoon dried mustard1/4 teaspoon dried basil1/4 teaspoon onion powder1 teaspoon honey2 teaspoons olive oilSalt and Pepper

In a small bowl, mix all ingredients together. Chill for at least 1 hour for best flavor.
