Thai Turkey Lettuce Wraps with a Sweet Soy Ginger Sauce (02.15.12)

1 tablespoon canola oil1/2 red onion, diced1 pound ground white meat turkey3 tablespoons fish sauce2 tablespoons soy sauce1 lime, juice and zest1 bunch green onions, thinly sliced1 jalapenos, seeded, de-veined, and thinly diced1/4 cup chopped cilantro1/4 cup chopped peanutslettuce leaves, (Boston, Romaine or iceberg)

Heat canola oil over medium heat in a large non-stick skillet. Lightly sauté red onion until it begins to soften, about 5 minutes.
Add turkey and break apart with a spatula. Add fish sauce, soy sauce and lime juice to turkey and stir. Continue to cook until no longer pink, about 5-7 minutes. Drain any juice or fat and turn off the meat.

To serve, put 1/4 cup of meat in a lettuce leaf, then top with some green onions, jalapeno pepper, pinch of cilantro, and a sprinkle of peanuts. Top with Sweet Soy Ginger Sauce.

Sweet Soy Ginger Sauce
1/4 cup soy sauce1/2 teaspoon garlic, grated or minced1 teaspoon ginger, grated2 teaspoons sesame oil1 teaspoon Dijon mustard1 teaspoon chili garlic sauce1 teaspoon sesame seedsMix all ingredients in a bowl. Stir well. Serve with lettuce wraps
