3 teaspoons olive oil, divided1/4 cup finely chopped shallots3 cloves of garlic, minced1 cup quinoa1 ½ cups broth or water1/4 teaspoon cayenne pepper1 can beans, any kind, rinsed1/4 cup parsley or cilantro, chopped1/2 teaspoon dried thyme1/2 teaspoon lemon-pepper seasoning2 tomatoes, diced1/4 cup parmesan cheese2 green onions, diced1/2 lemon, juiceSalt and Pepper, to taste
Heat a saucepan over medium-high heat. Add 1 teaspoon of oil to pan and when warm add in the shallots. Cook for two minutes and add garlic. Cook another minute. Add rinsed quinoa and sauté for two minutes. Add broth or water, cayenne pepper, salt and pepper. Bring to a boil. Cover and allow to simmer for 15 to 18 minutes or until all liquid is absorbed. Remove from heat and allow to sit covered for five minutes. Stir in beans, parsley, thyme, lemon-pepper, tomatoes, cheese, onions, lemon juice and remaining olive oil. Add additional salt and pepper, if needed.
