Green Chile Cheeseburgers (02.29.12)

  • 2 poblano chilies, sliced
  • 1 pound ground beef
  • 2 cloves garlic, diced
  • 1 teaspoon ground chili powder
  • 1 egg (optional)
  • 4 hamburger buns
  • 4 slices pepper jack cheese
  • 1/4 onion, sliced
  • 1 medium tomato, sliced
  • 4 leaves lettuce, any type
  • 1/2 cup fresh salsa
  • Salt and Pepper, to taste

In a frying pan on the stove or grill, coat the bottom with olive oil and sauté the chilies for 2-3 minutes with salt and pepper. Mix beef with garlic, ground chili, egg (if using), salt and pepper in a large bowl. Shape into 4 flat patties. In a large frying pan, cook burgers over medium-medium-high heat to desired doneness. Just before serving, sprinkle cheese on top of each bun. Toast the buns until they are lightly browned and the cheese is melted. Top each bun with a hamburger patty, green chiles, onion slices, tomato slice, and lettuce leaf. Serve immediately with fresh salsa on the side. Serves 4.
