Summer Vegetable “Ceviche” (07.02.12)

  • 1 ripe avocado, cut into strips (for garnish)
  • ¼ C Jicama diced
  • ¼ C Diced squash (zucchini and yellow)
  • ¼ C Diced tomatos
  • 1 T minced red onion
  • ¼  C  Chick peas rinsed and chopped
  • 1 T Cilanro, rough chopped
  • 1 t fresh oregano, minced
  • Juice from 1 ime
  • 2 T Olive oil
  • ½ t Cumin
  • Kosher Salt and Black Pepper to taste

Combine all ingredients (except avocados) in a mixing bowl and stir well to combine. Season with salt and pepper and place in center of serving plate.  Arrange avocado sliced around and serve with tortilla chips.
