Sausage and Egg Skillet Scramble

1 teaspoon canola oil

1 pound Tennessee Pride Sausage, mild, sage or hot

1/2 onion, diced

1/2 green pepper, diced

1 Anaheim pepper, diced

1 can (4 oz.) green chilies, diced

6 eggs

2 tablespoons milk

1/2 cup cheddar cheese, shredded

1/4 cup cilantro

3 green onions

1 avocado, sliced

1/2 cup salsa

1/2 cup sour cream

Salt and Pepper, to taste

In a large skillet, heat the oil to medium to high heat. Break up and sausage stirring frequently for 8-10 minutes or until completely cook through. Remove from pan. Cover with tinfoil.

In the same pan over medium o high heat, add the onion, green pepper, Anaheim pepper, salt and pepper.  Sauté for 4-5 minutes until slightly softened. In a large bowl, whisk together the eggs, milk, salt and pepper. Add to the skillet. Cook for 3-4 minutes stirring frequently. Add the sausage back to the pan with the cheese. Stir all ingredients together; cook an additional 2 minutes. Add cilantro, green onions and avocado. Serve with salsa and sour cream.

Serving Option: Wrap sausage and egg mixture in a flour tortilla. Top with salsa and sour cream.
