- 1 pound pasta, any type, cooked to al dente
- 1 pound chicken breast, cut into bite size pieces, cooked
- 2 carrots, thinly sliced
- 1/2 red bell pepper, diced
- 1/4 onion, diced
- 1/4 cup cilantro, chopped
- Ranch Dressing
- 1 cup mayonnaise
- 1/2 cup sour cream or Greek yogurt
- 1/2 teaspoon dried chives
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried dill
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- Salt and Pepper, to taste
In a large bowl combine the cooled pasta, chicken, carrots, pepper, onion, cilantro, salt and pepper. In a small bowl, mix all the ingredients for the ranch dressing. Pour over the chicken pasta mix. Mix well. Serve room temperature or chill for at least 2 hours for enhanced flavor.
