- 12 large tortillas
- 1/2 cup olive oil
- 2 cups pepper jack or mozzarella cheese, shredded
- 2 teaspoons chili powder
- 1/2 pound boneless pork, cooked, diced or shredded
- 4 pickled jalapenos, diced (optional)
- 1 cup corn
- 1 cup sour cream or plain Greek yogurt
- 1 cup salsa
- 1/4 cup cilantro, diced
- 3 green onions, diced
- Black Pepper, to taste
Bring a large frying pan up to low-medium heat. Brush both sides of each tortilla with oil. Divide some of the cheese, chili powder, pork, jalapenos (if using), corn and pepper on 6 tortillas. Top with remaining tortillas. Cook one quesadilla at a time in the pan for 2-3 minutes on each side until golden brown and cheese has melted. Serve with sour cream or yogurt, salsa, cilantro and green onions.
