- 1 cup finely crushed corn or tortilla chips
- 1 tbsp. chili powder
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. red pepper flakes
- 1/4 tsp. dried oregano
- 1/2 tsp. paprika
- 1 1/2 tsp. ground cumin
- 2 tablespoons onion, minced
- 1 egg, lightly beaten
- 1 pound ground beef
- 12 small slices cheddar cheese (to fit mini burgers)
- 12 rolls, split
- 1/2 cup baby spinach leaves
- 2 Roma tomatoes, sliced
- 1 cup salsa
- 1/2 cup sour cream (optional)
- Salt and Pepper, to taste
In a large bowl, combine the first 11 ingredients with salt and pepper. Mix well. Shape into 12 mini patties.
Grill, covered, over medium heat or broil 4 in. from the heat for 5-6 minutes on each side or until a thermometer reads 160° and juices run clear. Top each burger with a cheese slice; cook just until cheese begins to melt. Serve on buns with spinach, tomato slices, salsa and sour cream, if desired.
