Bacon and Cheese Beef Sliders with Chipotle Aioli (09.20.13)

Sliders:

  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 pound ground beef
  • 6 ounces cheddar cheese, shredded
  • 4 pieces bacon, cooked, crumbled
  • 8 (3-inch) buns or rolls, split in half
  • Salt and Pepper, to taste

Chipotle Aioli:

  • 1 cup mayonnaise
  • 2 tablespoons chives
  • 2 garlic cloves, minced
  • 2 tablespoons lime juice
  • 1 teaspoon chipotle chili powder or chipotle hot sauce
  • Salt and Pepper, to taste

Combine the onion powder, garlic powder, pepper, and salt in a small bowl. Mix the spices into the beef. Form 12 small patties (slider size).

Place the burgers on a hot, greased grill or pan and cook for 2 to 3 minutes per side or until cooked through and to desired doneness. One minute before finished cooking, add cheese on top of each burger to melt through.

For the aioli, whisk mayonnaise with chives, garlic, lime juice, and chipotle chile powder or chipotle hot sauce to taste. Season with salt and pepper; chill until ready to serve.

Spread a small amount of aioli on each bun and top with a slider burger, bacon pieces and any additional preferred condiments. Serve immediately.
