Peanut Hoisin Chicken Lettuce Cups (11.12.13)

  • 2 teaspoons olive oil
  • 1/2 onion, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, diced
  • 2 carrots, diced
  • 1/2 lb. chicken, cooked, cut into bite size pieces
  • 2 tablespoons peanut butter
  • 2 tablespoons hot water
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 head iceberg lettuce, separated into “cups”
  • 1 tablespoon sesame seeds
  • 2 green onions, diced
  • Salt and Pepper, to taste

In a large frying pan, bring oil up to medium high heat. Saute the onion, celery, garlic and carrots with salt and pepper for 3-4 minutes. Add the cooked chicken.

In a small bowl, stir together the peanut butter, hot water, hoisin and soy sauce with the sesame oil. Pour into pan; stir well. Cook another 3-4 minutes.

Place some of the mixture into the lettuce cups. Top with sesame seeds and green onions. Serve immediately.
