- 2 tablespoons butter
- 1/2 medium onion, diced
- 1/2 green bell pepper, diced
- 4 slices of cooked bacon, torn in small pieces
- 4 cooked sausage links, cut into small pieces
- 6 eggs lightly beaten
- 1/2 c. shredded cheddar cheese
- Salt & Pepper to taste
- 6 Flour tortillas
- 1 cup sour cream
- Cornaby’s Raspberry Jalapeno or Chipotle sauce
- Salt & pepper to taste
In medium pan, add the butter and bring up to a medium heat. Saute the onions, peppers and breakfast meats until onions and peppers are tender. Mix in eggs and cook until no longer runny. Add salt and pepper to taste and mix in cheddar cheese. Wrap in warm tortillas, top with sour cream and Cornaby’s spicy sauce and enjoy.
