- 2 eggs, beaten
- 1/4 cup brown sugar
- 3 tablespoons mustard
- 1/2 cup vinegar
- 1 tablespoon butter
- 8 slices marble rye bread
- 4 slices Swiss cheese
- 8-12 slices corned beef, cooked
- 1 cup cabbage or sauerkraut
- Salt and Pepper, to taste
Preheat oven to 350 degrees F.
For the sauce, combine the first 5 ingredients with salt and pepper in a saucepan up to medium heat. Continue whisking until thickened (approx. 5 minutes). Let cool.
Lay out the marble rye bread a baking sheet. Spread some of the sweet mustard sauce on the inside of each piece of bread. Add 1 piece of Swiss cheese on 4 of the slices. Bake for 3-4 minutes until cheese melts and bread slightly toasts. Add some corned beef slices, cabbage or sauerkraut. Cut in half. Serve immediately.
