- 2 tablespoons olive oil, divided
- 1 pound ground beef or ground turkey
- 1 poblano or Anaheim pepper, diced
- 1/2 onion, diced
- 3 garlic cloves, diced
- 1 cup red enchilada sauce
- 1 cup Monterrey jack cheese
- 12 small buns
- 1/4 cup salsa
- 1/4 cup sour cream
- 1 jalapeno, sliced
- Salt and Pepper, to taste
Pre-heat your oven to 400 degrees.
In a large skillet, heat one tablespoon olive oil over medium-high heat. Cook the onions and peppers with salt and pepper until crisp tender. Add the garlic and cook for 1-2 minutes. Remove the peppers, onions, and garlic from the pan and set aside.
Add remaining one tablespoon of oil to the pan with the ground beef or turkey. Cook on medium-high heat while breaking into pieces as it cooks. When the meat is fully cooked, drain excess fat. Add the cooked onions, peppers, and garlic back to the pan. Pour in red enchilada sauce. Bring to a boil, then reduce heat and simmer for 10-15 minutes. Top each bun with some of the meat mixture and some of the shredded Monterrey jack cheese. Arrange the sandwiches on a baking sheet and bake for about 5 minutes, or until the cheese is melted and the bread is starting to toast. Serve immediately with salsa, sour cream and jalapeno slices for suggested toppings.
