Taco Burgers with Chipotle Sauce (05.20.14)

  • 1 lb lean ground beef
  • 1/2 cup salsa
  • 1 large egg
  • 0.5 (1 1/4 ounce) package taco seasoning mix
  • 4 slices Monterey jack pepper or cheddar cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 teaspoons chipotle hot sauce
  • 1/4 cup fresh cilantro
  • 4 hamburger buns, any kind
  • 4 tomato slices
  • 4 red onion slices

In a large bowl, mix together the beef, salsa, egg and the 1/2 packet of taco seasoning. Shape into 4 burgers patties. On a greased grill or large frying pan up to high heat, cook the burgers for 5-6 minutes on each side, turning once, or until desired doneness. Add cheese to melt 2 minutes before burgers are finished cooking.

Place the mayonnaise, sour cream, chipotle hot sauce and cilantro in a small bowl; mix thoroughly. Serve burgers on buns spread with chipotle sauce and topped with tomato and onion slices.
