- 2 large tomatoes, cut in half
- 2 5oz chunk light tuna packed in water, drained
- 1/2 cup chopped cucumber
- 1/2 cup chopped bell pepper
- 4 ounces feta cheese, crumbled
- 1 teaspoon capers, chopped
- 1/2 teaspoon dried oregano
- 3 teaspoons lemon juice
- 3 tablespoons olive oil
- Salt and Pepper, to taste
Scoop out seeds and some of the inner part of the tomato halves. Dice up and place in a large bowl. Add the tuna, cucumber, pepper feta and capers. In a small bowl, mix together the oregano, lemon juice, oil, salt and pepper. Pour over tuna mixture. Stir to combine. Serve tuna mixture inside tomato halves.
