- 3 bell peppers, orange, yellow, red or green, diced
- 2 celery sticks, chopped
- 2 carrots, thinly sliced
- 3 green onion, diced
- 1/4 cup cilantro
- 1/4 teaspoon ginger, grated
- 1 garlic clove, grated
- 3 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1/4 cup olive oil
- No salt seasoning and pepper, to taste
In a large bowl, combine the first 5 ingredients. In a small bowl, whisk together the ginger, garlic, vinegar, honey, mustard, oil, no salt seasoning and pepper. Combine with pepper mixture. Refrigerate for at least an hour for the best flavor.
