Tri-Pepper Salad (07.03.14)

  • 3 bell peppers, orange, yellow, red or green, diced
  • 2 celery sticks, chopped
  • 2 carrots, thinly sliced
  • 3 green onion, diced
  • 1/4 cup cilantro
  • 1/4 teaspoon ginger, grated
  • 1 garlic clove, grated
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil
  • No salt seasoning and pepper, to taste

In a large bowl, combine the first 5 ingredients. In a small bowl, whisk together the ginger, garlic, vinegar, honey, mustard, oil, no salt seasoning and pepper. Combine with pepper mixture. Refrigerate for at least an hour for the best flavor.
