- 2 pounds frozen peas, thawed
- 3 carrots, chopped
- 2 celery stalks, chopped
- 1/2 small red onion, peeled chopped
- 3 ounces feta cheese, crumbled
- 1/2 cup of mayonnaise
- 1/4 teaspoon paprika
- 1/4 cup parsley, chopped
- 2 tablespoons fresh mint, chopped
- Salt and Pepper, to taste
Combine all ingredients in a large serving bowl. Refrigerate for at least 2 hours for best flavor. Stir before serving.
