- 1/2 teaspoon Berry Cherry Koolaid fruit flavored drink mix
- 1 cup sugar
- 2 cups water
- 10 tablespoons Ultra Gel instant food starch
- 1 tablespoon fresh lemon or lime juice
- 1 lb. freshly washed raspberries
- 1 prepared 9” pie crust (graham cracker or pre-baked)
Combine drink mix, sugar and water in medium bowl and stir until dissolved. Gradually add Ultra Gel, stirring constantly with wire whisk. Let stand for 30 seconds to thicken. Add lemon juice and stir until smooth. Carefully fold in 1 lb. freshly washed raspberries with a rubber spatula, leaving berries whole. Pour pie filling into prepared pie shell and smooth. Refrigerate until ready to serve. Serve with sweetened whipped cream and garnish with fresh raspberries and mint leaves.

Washing raspberries: Pour a layer of raspberries into a colander and gently spray with cold water to remove any dust or plant particles. Allow excess water to drain. Line a tray with double layers of paper towels. Gently pour raspberries onto tray and rock berries back and forth to remove excess water.
