- 4 slices sourdough bread
- 4 tablespoons butter, softened
- 4 ounces What’s Her Name? Oolite Cheese
- 4 eggs
- 4 slices bacon, cooked, cut in half
- 1 tomato, sliced
- 8-10 fresh basil leaves
Preheat oven to 400 degrees F.
Place bread on a baking sheet. Spread butter over one side of each piece of bread. Add the cheese on top. Bake for 5-6 minutes until cheese melts and bread toasts.
In a greased frying pan, cook each egg oven medium to high heat until they start to turn white. Cover the pan. Cook an additional 1-3 minutes. Add salt and pepper.
To build the open faced sandwiches, place some of the bacon over the melted cheese; add the tomato. Place the egg on top. Garnish with basil leaves. Serve immediately.
Note: The Oolite What’s Her Name? cheese is similar to Manchego cheese. Good for melting. You can use any type of bread.
