Recipe: Mini Pesto and Goat Cheese Club Sandwiches (09.22.14)

  • 8 dinner rolls, split
  • 1 cup purchased pesto
  • 4 oz. goat cheese
  • 8 slices bacon, cooked
  • 8 slices lunchmeat turkey
  • 8 small lettuce leaves, any kind
  • 2 Roma tomatoes, sliced
  • 8 large black olives
  • 8 toothpicks

Spread some of the pesto and goat cheese on the inside of each roll. Top each with 1 slice of bacon (cut in half), 1 slice of turkey (folded), a lettuce leaf and tomato slice. Place top of roll on and secure each olive with a toothpick through the top. Serve immediately.

Note: Heat oven to 300 degrees. Place sandwiches on a baking dish before inserting olive. Bake for 5-6 minutes to serve toasted.
