Recipe: Honey Mustard Chicken Tenders (10.15.14)

  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1 teaspoon garlic powder
  • 3 tablespoons Slide Ridge Honey Vinegar
  • 3 tablespoons Slide Ridge Honey
  • 1 1/2 pounds chicken tenders, rinsed and pat dry
  • 1 cup panko bread crumbs
  • 1 cup plain bread crumbs
  • 1 tablespoon olive oil
  • Salt and Pepper to taste

Preheat oven to 400 degrees.

Whisk together mayonnaise, mustard, garlic, vinegar, honey, salt and pepper. Place half the mixture in a separate serving bowl. In another bowl or plate, place the panko and plain bread crumbs. Coat each chicken tender fully in the honey mustard mixture, then in the breadcrumbs. Coat each tender completely. Place on prepared baking sheet, drizzle with olive oil and bake for 20 – 25 minutes. Turn on broiler. Broil for 3 minutes or until browned.

Serve immediately with honey mustard mixture in serving bowl.
