Egg, Sausage, Cheese Breakfast Bagels
non-stick cooking spray
1/4 lb. sausage, cooked, crumbled
2 large eggs
4 teaspoons cheddar cheese, grated
1 teaspoon chives
2 bagels, any kind, toasted
4 tablespoons cream cheese
2 tomato slices
Salt & Pepper, to taste
Spray two large ramekin’s with (non-stick cooking spray. In a large bowl combine the sausage eggs, cheese, chives, salt and pepper. Mix together. Equally divide the mixture in the ramekin’s. Microwave the egg mixture covered for 1 minute. If still runny, microwave an additional 15 seconds. After toasting the bagels, divide the cream cheese on each one and spread evenly. Top with egg mixture and tomato. Serve immediately.
