Barely Buzzed Apple Crisp (11.06.14)

For the crisp:
• 5 large apples (tart apples like a Pink Lady or Granny Smith preferred)
• 1/2 cup white sugar
• 1/2 cup dark brown sugar
• 1 tsp. cinnamon
• 1/2 tsp. nutmeg
• 1 pinch of salt
• 3 tbs. corn starch
• 2 tbs. lemon juice

For the topping:
• 1 cup all purpose flour
• 1/2 cup dark brown sugar
• 1/2 cup white sugar
• 1/2 cup cold, unsalted butter
• 1/3 cup grated Barely Buzzed cheese

Directions:
Preheat oven to 400 degrees. Peel and slice the apples into 2” chunks. In a heavy bottomed pan, combine apples, sugars, cinnamon, nutmeg, salt, corn starch and lemon juice. Cook until apples are just tender and sauce is slightly thickened, about 10 minutes.
Pour mixture into a heavy bottomed baking dish.

Mix together all dry top- ping ingredients and then cut in butter until mixture is crumbly. Toss in cheese and mix gently. Sprinkle topping over apples. Bake for 45 minutes to an hour or until top- ping is crisp and sides are bubbly.
