Egg, Spinach, Tomato, Cheddar Tacos (11.10.14)

  • 8 large eggs
  • 2 cups baby spinach, chopped
  • 1 tomato diced
  • 3 tablespoons milk
  • 1/4 cup cheddar cheese, shredded
  • 2 tablespoons butter
  • For serving:
  • 4 corn or flour tortillas, softened
  • 2 tablespoons cilantro, diced
  • 2 green onions, diced
  • Hot Sauce
  • Salsa
  • Sour cream
  • Salt and Pepper, to taste

In a large bowl, mix together the first 5 ingredients together with salt and pepper. Melt the butter in a large skillet over medium heat. Add the egg mixture. Cook, stirring frequently for 4-5 minutes or until eggs have some together.

To serve, add some of the egg mixture to each tortilla. Top with desired toppings: cilantro, green onions, hot sauce, salsa and sour cream.
