Buffalo Beef Meatballs with Blue Cheese Dip
- 1 lb. ground Canyon Meadows Ground Beef
- 1 large egg
- 3/4 cup plain breadcrumbs
- 8 oz. buffalo wing sauce (i.e. Frank’s Hot Sauce)
- 3 tablespoons canola oil
- Salt and Pepper, to taste
For the Blue Cheese Dip:
- 6 oz. plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1/4 cup crumbled blue cheese
- Salt and Pepper, to taste
For the meatballs, combine ground beef with egg, breadcrumbs, salt and pepper in a large bowl. Form mixture into desired size meatballs. In a large frying pan, bring oil up to medium high heat. Cook meatballs on each side until cooked all the way through. While still warm, place meatballs in a large bowl. Pour buffalo sauce over meatballs; coat completely. Serve on a platter with toothpicks with dip.
For the Blue Cheese Dip, combine all the ingredients for the dip in a small bowl. Refrigerate until ready to serve.
