Recipe: Simple Egg White Omelet (12.30.14)

Simple Egg White Omelet

  • 2 1/2 tablespoons olive oil
  • 12 egg whites
  • 1/4 onion, any kind, diced
  • 1 tomato, diced
  • 1 avocado, diced
  • 2 tablespoons cilantro, torn
  • Hot Sauce, no or low sodium for serving
  • No Salt Seasoning and pepper, to taste

In a bowl, whisk together the egg whites with no salt seasoning and pepper. In a medium to high frying pan, sauté the onion in half a tablespoon olive oil. Remove the onion. Cook three egg white, one at a time, in half a teaspoon of oil with a few of the onions. Fold each side to form an omelet shape. When almost cooked to desired doneness, add some tomatoes and avocado to heat up. Place each omelet with toppings on a plate. Garnish with cilantro. Serve immediately with hot sauce.
