Cauliflower Salad with Bacon (02.09.15)

  • 3/4 cup mayonnaise or Greek yogurt
  • 3 teaspoons lemon juice
  • 3 teaspoons sugar
  • 1 medium head cauliflower, broken into florets
  • 1/2 lb. sliced bacon, cooked and crumbled
  • 1/2 cup Parmigiano-Reggiano, grated
  • 1 medium red bell pepper, chopped
  • 3 green onions, chopped
  • 1/4 cup almonds, sliced
  • 1/4 cup raisins (optional)
  • Salt and Pepper, to taste

Combine the first 3 ingredients in a large bowl with salt and pepper. Add the cauliflower and the next 5 ingredients and the raisins, if using. Refrigerate for at least 2 hours for the best flavor.
