Pancakes with Cinnamon Brown Sugar Honey Butter (02.18.15)

  • 2 cups 16 Grain Tree Street Grains Pancake Mix
  • 2 eggs
  • 2 tablespoons vegetable oil
  • 1 1/4 cup milk
  • 1/2 cup Chef Shamy Cinnamon Brown Sugar Honey Butter, divided
  • 1/4 cup slivered almonds
  • 1/4 cup pecans, crushed
  • 1/3 cup walnuts, crushed
  • 1/2 cup blueberries (any berry)
  • 1 banana, sliced
  • 1/4 cup raisins
  • 1 tablespoon chia seeds

Yields 12.

For the pancakes, mix the first 4 ingredients together. On a preheated griddle, brush 2 tablespoons of butter. Cook six pancakes at a time for 2-3 minutes on each side or until golden brown. Repeat process.

Mix remaining 8 tablespoons of melted butter in a bowl with nuts, berries, banana, raisins and chia seeds. Serve over pancakes.
