Crepes with berry filling (3.27.15)

Crepes with Fresh Berry Filling

  •  ½ C COLD whole milk
  • ½ C ice COLD water
  • 2 whole eggs
  • 1 C all propose flour
  • 2T melted butter

Blend first four ingredients in a blender until smooth.  Add melted butter and let rest in the refrigerator for at least an hour.

Works best to put about 2-3 oz of batter in a HOT non-stick egg pan and move around until the bottom is coated evenly with the batter . Cook until it releases and flip to cook the other side for a minute or so.

Filling 

  • fresh berries (washed)
  • powdered sugar

Coat the fresh berries in powdered sugar to your taste.  If berries are sweet enough, leave the powdered sugar out.

Crepe' Topping

  • 1 C sour cream or Greek yogurt
  • ½ C brown sugar
  • ¼ t cinnamon
  • Pinch nutmeg

Mix above ingredients together.

Drizzle over the top of the finished and filled crepe’
