Meatloaf with Parmesan Cheese (04.14.15)

  • 2 tablespoons canola oil
  • 1/2 medium onion
  • 3 garlic cloves
  • 1½ pounds ground beef
  • 1 large egg
  • 1/2 cup chopped flat-leaf parsley
  • 1/2 cup bread crumbs
  • 1/4 cup tomato paste
  • 2 tablespoons mustard
  • 1/2 cup grated Parmesan cheese, divided
  • 1/2 cup ketchup
  • 3 green onions, chopped
  • Salt and Pepper

Preheat oven to 375 degrees F.

Bring the oil up to medium high heat in frying pan. Saute the onion and garlic with salt and pepper for 3-4 minutes. Let cool slightly. In a large bowl mix together the beef, egg, parsley, breadcrumbs, tomato paste, mustard and half of the parmesan cheese.

On a foil-lined baking sheet, form the mixture into an 8-inch loaf. Bake until cooked through, 40 to 50 minutes. Brush ketchup over the meatloaf. Top with remaining parmesan cheese and green onions. Cut into slices and serve immediately.
