Broccoli Salad (04.23.15)

  • 5 cups small broccoli florets
  • 1 cup mayonnaise or Greek Yogurt
  • 2 tablespoons apple cider vinegar
  • 1/4 cup sugar
  • 1/3 cup onion, chopped
  • 3/4 cup raisins
  • 5-6 pieces bacon, cooked and crumbled
  • 1/2 cup sesame kernels

Bring a large saucepan of salted water to a boil. Add the broccoli and blanch until bright green and slightly softened, about 3 minutes. Drain. Place immediately in a large bowl filled with ice water. Drain again.

In a large serving bowl, combine the mayonnaise or yogurt, vinegar, sugar, salt and pepper. Add the broccoli, onion and raisins; toss to coat with the dressing. Refrigerate for 1 hour. Just before serving, fold in the bacon and sesame seeds. Serve immediately.
