Steak and Potatoes:
- 4 large Russet potatoes
- 1/2 lb. sirloin steak, cut into strips
- Blue Cheese Dressing:
- 1/3 cup Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 4 ounces blue cheese, crumbled
- Salt and Pepper, to taste
Suggested Toppings:
- Cherry tomatoes, cut in half
- Cilantro, torn
- Bacon, crumbled
- Extra Cheese
- Green Onions
Preheat oven to 400 degrees.
Bake potatoes for one hour on oven rack. Let cool for 5 minutes. Cook steak to desired doneness.
For the dressing, combine all ingredients in a bowl. Cut potatoes in half and fork until softened. Divide the steak amongst each, top with some of the dressing and desired toppings. Serve immediately.
