- 3 teaspoons apple cider vinegar
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 2 tablespoons shallot, minced
- 1/4 cup olive oil
- 3 ripe avocados, diced
- 2 large grapefruits, segments cut from between membranes
- 2 cups baby spinach
- No Salt Seasoning and Pepper, to taste
In a large bowl, combine the first 5 ingredients with no salt seasoning and pepper. Fold in the avocado and grapefruit. Serve over spinach.
