Sausage Bean Casserole (05.11.15)

  • 2 tablespoons olive oil
  • 1/2 onion or 1 leek, chopped
  • 3 garlic cloves, diced
  • 4-5 sweet or spicy Italian sausage, casing removed, chopped
  • 3/4 cup vegetable or chicken broth
  • 1 can white beans
  • 2 cups kale, chopped
  • Pinch of red pepper flakes
  • Salt and Black Pepper, to taste

In a large skillet, bring oil up to medium-high heat. Saute onion or leek in oil for 2-3 minutes. Add garlic, salt and pepper. Cook another minute. Add sausage and saute for 5-6 minutes, breaking down in the pan. Add broth, beans, kale and red pepper flakes. Taste; add additional salt and pepper, if needed. Serve immediately.
