Step 1 – Place In Medium Size Pot
- 1 Bunch of Asparagus-Cut off stock ends and place in pan. Set aside the tops.
- ½ Onion-Chopped
- 1 tbsp. chopped garlic
- 2 tbsps. Of Chicken Demi
- 1 Quart of water
Add:
- dash of Salt and Pepper
Bring ingredients (listed above) to a boil (approx. 30 minutes)
Step 2 – Add
- 4 tbsps. Butter
- 4 tbsps. Flour
Cook until flour is beige and the texture of sand
Step 3 – Saute in Sauce Pan
- 1 tbsp. of butter
- ¼ lb. of medium shrimp
- 2 diced Shallots
Sauté shrimp and shallots in butter, until shrimp turns pink
Step 4
Strain ingredients from step 1 over ingredients in Step 3
Bring to a Boil
Add:
- 1 Cup heavy cream
- Asparagus tops (cut into 1in. pieces) (set aside in step 1)
Garnish with:
- chopped green onions
Add :
- Salt and Pepper to taste
