- 4 strips bacon
- 1/4 onion, slices
- 1 ripe, Fresh Hass Avocado, seeded and peeled
- 8 rolls or small Hawaiian-style sweet rolls, split
- 2 tablespoons olive oil
- 3 oz. cheddar cheese, shredded
- 1 cup baby spinach
- Salt and Pepper, to taste
Preheat oven to 350 degrees.
Cut bacon strips in half crosswise and cook in a large skillet over medium heat until crisp. Place cooked bacon on paper towels; reserve. Drain half of the bacon grease from the pan. Bring back up to medium heat. Cook onions with salt and pepper for 12-15 minutes until golden brown.
Lay buns open face on a baking sheet. Brush with oil. Top each bun with some of the cheese. Bake for 4-5 minutes until toasted and cheese melts.
Assemble the sliders: Place a couple pieces of bacon on each bun, top with some of the onion, avocado and spinach. Serve immediately.
