Makes 4 1/4 cups
Ingredients:
- 6 1/4 cups diced tomatoes
- 1 cup ketchup1 tablespoon Cajun spice
- 1 tablespoon chile powder
- 1/4 cup Dijon mustard
- 1 1/2 teaspoons minced garlic
- 1/8 cup minced fresh oregano
- 1 teaspoon dried cumin
- 1 1/2 tablespoons minced jalapeno chiles, stemmed and seeded
- 1 1/2 cups chopped onion
- 1 1/8 cups brown sugar
- 3/4 cup red wine vinegar
- 6 tablespoons molasses
- 6 tablespoons Worcestershire sauce
- 1 1/2 cups water
- 1 1/2 teaspoons liquid barbecue smoke, optional
Instructions:
In a large, heavy bottomed pot over medium heat, add all the ingredients and bring to a boil, stirring frequently. Reduce to a simmer. Simmer for 1 hour, stirring occasionally, to keep the sugars in the sauce from sticking and burning.
