Blue Cabbage Slaw (07.02.15)

Posted

Ingredients:

  • 1 head Red Cabbage washed
  • Kosher salt
  • Sugar
  • Baking Soda

Instructions:

Cut cabbage in half and remove core.  Shred the cabbage as thin as possible (half a cabbage will be enough for this recipe wrap the other half and store).  Place in a large bowl and sprinkle with about half a teaspoon of baking soda.  Toss gently to incorporate and allow to sit until cabbage has developed a deep blue color along the cut edges. This is caused by the acids in the cabbage reacting with the baking soda. Once a nice blue color has been achieved lightly sprinkle a few pinches of salt and sugar on the cabbage and mix to incorporate.  Continue to add sugar or salt to taste. Allow it to sit for at least 30 minutes to macerate and soften.
