Baked Catfish (06.08.15)

  • 1 lb. catfish fillets, cut into 4 pieces
  • 1/2 tablespoon dried dill
  • 1/2 tablespoon dried oregano
  • 2 tablespoons olive oil
  • 1 teaspoon canola or olive oil based butter
  • 1/2 large lemon, cut into thin slices
  • 4-6 basil leaves, torn
  • Paprika for garnish
  • No Salt Seasoning and Pepper, to taste

Season fish with dill, oregano, no salt seasoning and pepper. In a large frying pan, bring the oil and butter up to a medium high heat. Add the fish. Cook on each side for 1 minute. Place lemon slices over the fish. Place the pan in the oven and cook 6-8 minutes depending on thickness or until the fish is done. Garnish with basil and paprika.
