Chili Lime Chicken Tacos
- 1 lb. boneless, skinless chicken breasts, cubed
- 2 limes, divided
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon dried oregano
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 8 6-inch whole wheat tortillas
- 1 tomato, diced
- 1⁄4 cup shredded lettuce
- No Salt Seasoning and Pepper, to taste
- In a large bowl or sealable plastic bag, place chicken, juice of 1 lime juice, chili powder, cumin, oregano, green onion, garlic, no salt seasoning and pepper. Mix together. (Note: you can marinade the chicken mixture up to 1 hour.).
- Heat oil in a large skillet over medium to high heat. Cook chicken mixture for 5-7 minutes or until chicken is cooked all the way through. Warm tortillas in a dry pan one at a time or all of them in the microwave for 30 seconds between damp paper towels. Serve chili lime chicken mixture in warm tortillas topped with tomatoes and lettuce. Cut remaining lime into 8 wedges. Serve 1 wedge per taco.
